Kick those banana cravings to the curb with this creamy pudding.
- 1 1/2 cup heavy whipping cream
- 1/4 cup monk fruit sweetener (I used Lakanto Classic)
- 3 egg yolks
- 1 teaspoon xanthan gum
- 1 teaspoon banana flavored extract
Don’t be alarmed by the high total carb count!
Erythritol and Monk Fruit (the main ingredients in this Lakanto Monk Fruit sweetener blend) do not affect blood sugar in the same way that regular carbs do, so we subtracted them from the total carb count. You’ll see that the net carbs are much lower once you remove the sugar alcohols.
