  • 2 pounds boneless chicken thighs
  • 1 tablespoon
  • 1 tablespoon chili powder
  • to taste
  • to taste
  • fresh cilantro for garnish
  • lime wedges for serving


  • Preheat oven to 375 degrees.
  • Place chicken on a sheet pan or large baking dish. Drizzle with olive oil and turn to coat. Rub with chili powder, salt, and pepper.
  • Roast the chicken thighs in the oven until cooked through, about 15 minutes.
  • Sprinkle with cilantro and serve with lime wedges.
